Caramel Caffe' Mocha Cupcakes

Prepare to be led astray...

These bad boys will definitely
have you coming back for more!!!!

I had to make a dessert for a meeting that my
husband was headed too...
and for some reason
dark chocolate cake and coffee butter cream
were out to get me.
I have resisted their voices before...
but last night, I finally gave in...

and boy am I glad that I did.

These were heaven in your mouth!

Now because I can't leave well enough alone
and because I love to bake "something" inside my cupcakes...
I dug through my baking cupboard and
came up with an almost full bag of rolos.
Score!

Hhhhmmm thinks me...
caramel...good.
chocolate...good.
coffee...good.
Baked all together...very good!

And to make it even more decadent...
((I know this isn't going to make your thighs like you very much...))
I added a layer of chocolate ganache under the coffee butter cream.
Yum!

but I really wouldn't mean it;-)

Caramel Caffe' Mocha Cupcakes
dark chocolate cake mix
water
oil
eggs
rolos
Preheat oven to 350* Put cute liners in cupcake pan. Make the cake mix according to the directions on the back of the box. Fill liners halfway with cake batter. Press a rolo into the middle, but don't push it all the way in. (trust me on this) Cover the top of the rolo with some more batter. Bake for 22 minutes. Cool completely. Spoon on some chocolate ganache. Let set and frost with coffee butter cream.

Chocolate Ganache
1 c. dark chocolate chips
1/2 c. whipping cream
Boil whipping cream. Remove from heat. Stir in chocolate chips until melted. Let cool.

Coffee Butter Cream

1 c. butter, room temperature
2 tbsp. warm water
2 tbsp. instant coffee
1 tsp. vanilla
1/8 tsp. salt
4 c. powdered sugar
Put warm water in small dish. Spoon in the instant coffee and let dissolve. Set aside. Cream butter. Add coffee water, vanilla and salt and cream again. Slowly add your powdered sugar, beating after each addition. If it is thick, add just a touch more water.

Ya know what? I just remembered that I once made some chocolate cookies with a half of a Riesen tucked inside. Those things were the bomb. I'll have to try and find a good choc cookie recipe and try that again. YUM!
